Chicken Biryani Recipe








This is the easiest way of cooking Chicken biryani, even for the beginners. Our Biryani recipe is devided into four steps, meaning,Cooking Chicken Sauce,Frying onion and Potatoes  and Basmat rice cooking.


Ingredients list:



For Marination:

  • Whole chicken (cut into pieces)
  •  150 ml yoghurt
  •  1 tbsp crushed garlic
  •  1 tbsp crushed ginger
  •  1 tsp chili powder
  •  1 tsp salt
  • 1  tsp lemon/lime juice
  •  5 whole black pepper

For the Chicken Sauce
  • 1/2 cup oil
  • 1 tbsp whole cumin
  •  ½  stick cinnamon
  •  4 whole cardamoms
  •   1  tsp ground coriander
  •  5 fresh tomatoes and tomato paste 3tbsp
  • 1 tsp salt
  • 1 tbsp garam masala/chicken masala

For Frying Onions
  •  2  cups oil
  •  ½  kg onions (finely sliced)

For the rice
  •      1 kg of Basmat  Rice
  •       5 tablespoons,Yellow food color (Pilau masala) diluted in 2 tablespoon water and 2 bay leaves


PREPARATION:

  • In a bowl put the chicken pieces add the yoghurt and then all other ingredients under marination and mix well. Cover the bowl and refrigirate for 20-30 minutes or more

  • You could even marinate the chicken overnight.
    



  • Wash the Basmat rice, and Soak the rice for 30 minutes,drain off the water and set aside.

COOKING THE RICE:
  • Boil/Cook the drained basmat rice in the hot water with salt,2 bay leaves  and yellow food color. Cover the pot with aluminum foil and close it with its lid.Cook the rice in a medium heat or use the rice cooker.When water almost to dry, add food color diluted in 2tbsp of water on top of rice, then close the lid to dry completely.


 Ready? Remove and keep aside.








FRYING ONIONS:
Heat the oil to medium.
Add the sliced onions and  fry until dark brown, remove and set aside.



  • Fry the potatoes, then set aside





COOKING BIRYAN SAUCE:
  • Heat oil to medium and add cumin seeds, whole black pepper, whole cardamoms, cinnamon stick.




  • Then add the tomatoes, ginger, garlic cloves, tomato paste, salt and red chilies. 


  • Mix and Fry a until tomatoes turn mushy and  raw smell is gone completely.




  • Add the fried onions,salt, the Chicken from the fridge and a cup of hot water cover and cook on low heat for 10 more minutes/ cook until the chicken is ready.









To finish, add the lemon juice, stop the heat and keep aside.


And that’s it,  serve your biryani with fried potatoes fried potatoes, chicken sauce and and enjoy!.
