Crunchy Sweet Visheti recipe/Vikokoto



INGREDIENTS FOR VISHETI


  • 1 1/2 kg wheat Flour
  •  1 Cap Vannila Essence (Bottle Cap of Vannila)
  • 2 Tablespoon of melted Butter
  •  3 Tablespoon of  Custard powder
  •  1/4 Litre Milk/1/4 cup of water
  •  Pinch of Salt
  •  1 Litre Cooking Oil

INGREDIENTS FOR SUGAR SYRUP

  • 1 cup of water
  • 3/4 cup of sugar
  • 10 Cardamon pieces

METHOD OF PREPARING VISHETI

  • Melt the butter



  •  Mix salt,custard powder , melted butter into the wheat flour 
  • Pour the milk little by little and mix, 


  • Pull the mixture to form a dough( If you like non soft visheti/vikokoto do not knead the dough)



  •  Divide the dough into 3 balls
  •  Cut the dough using your hand and knife to make them long and thin dough

  • Take a knife cut each strips into smaller piece
  • The pieces are redy to be deep fried immediately  


HOW TO DEEP FRY VISHETI

  • Heat oil in the frying pan until hot
  • Pick few squares and place them in hot oil


  • After 5 minutes you can start turning the visheti,fry until the desired golden brown color
  • Remove from oil and drain any excess oil




  •  Let it cool before coating your visheti into sugar syrup

    COATING VISHETI IN SUGAR SYRUP

    •  Put the sugar into a pan, add the water, vanilla and cardamom mix well
    • Let the mixture boil and lower the heat and let it simmer
    • Let it simmer until it thickens slightly
    • Add all the fried Vishete into the syrup.

    • Toss/Shake the vishete in sugar syrup
    •  keep shaking the pot to toss the vishete up and down and putting it back on the heat until sugar coating turns whitish over visheti
    • Remove from heat and Put on plate and let them cool completely.



    You can then store them in an airtight container to retain their crunchiness.
