Ingredients:
- Perfectly Boiled 2 cups of dry kidney or red beans
- 2 Cups of coconut milk
- 2 tablespoon of sugar to taste/honey
- Few Cardamom seeds (iliki)
- ¼-teaspoon cinnamon powder (dalasini)
- 1 teaspoon of salt
- 1 teaspoon Royco
- 2 onions chopped
- 1 tomato chopped
- 2 tablespoon of tomato paste
- 2 cloves of garlic, crushed and chopped
- 1-teaspoon curry powder
- Oil to fry
Instructions:
Boil the beans
- Place them in a big sufuria fill it with water.
- Cover the sufuria with beans and let them boil for 1-2hours till they are done.
Making beans stew.
1. In a cooking pan fry onions 2. Add tomatoes,Use a cooking pot to press the tomatoes while cooking to make them soft quickly. Add garlic, Cardamom seeds, curry powder, Royco, cinnamon and salt and stir for 1 minute then add tomato paste then stir.
3.Add beans and cook for 30 seconds. 4. Add coconut milk and sugar , then stir and cover.
- The liquid should be the same level with beans when beans are ready to serve
