Tanzanian Matoke recipe


                           




Matoke/green plantain/Ndizi bukoba recipe

Ingredients for Matoke

10 thinly sliced plantain/matoke
2 cups of coconut milk
1 tablespoon of soy sauce
Finely chopped fresh coriander
Royco
2tablespoon of curry powder
2 pepper
4  tomatoes
1 finely chopped large onion
½ fresh ginger
6 garlic cloves.
One table spoon of cooking oil
salt



Method of preparing Matoke

 

Use the knife to remove the peel


Cut the plantain into the preferred pieces and put into water 



COOKING MATOKE

1. Heat the oil and Fry the onion and  ginger until the onions become soft,then add curry powder (simba mbili) and crushed garlic.





2.Add your grated tomato and let it cook for about 5 minutes. Then add your table spoon of soy sauce.

3.Add your sliced plantain (ndizi bukoba),mix it well and


4.Add just enough water to almost cover the top of matoke,add salt,Cover with a lid and on medium heat, allow the matoke to cook for 8 to 10 minutes


5.When they are almost soft,Uncover the sufuria and pour in the heavy coconut milk mixed with royco,add the pepper then let it boil until all of them are soft




6.If matoke, turns color from off white to mustard yellow, then it will be ready

7.Finally add coriander leaves Serve warm
