East African Red Velvet Cake





Ingredients

For The Cake

  • 2 1/2 cups Cake flour
  • 1 1/2 cups  sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1 teaspoon baking soda & vinegar 1 teaspoon.
  • tablespoons cocoa powder
  • ½ cup butter (unsalted)
  • large eggs
  • teaspoons pure vanilla extract
  • cup buttermilk (made by adding 1 tbsp of lemon juice or white vinegar to the 1 cup of milk stir and let it sit for 5 mins then use)
  • tablespoons liquid red food coloring

For Vanilla Icing/Frosting
    • 6 tablespoons all-purpose flour
    • 1 or 2 cups milk
    • 2 cups (4 sticks) unsalted butter, softened
    • 4 cups powdered sugar/icing sugar
    • 2 teaspoons vanilla extract


Instructions for the Red Velvet Cake 

  1. Combine  together the dry ingredients:In a medium bowl combine dry ingredients like: flour, salt and cocoa powder, baking powder. Set aside

  2. Prepare the cake pans and heat the oven:Preheat oven to 350 degrees.
  3. Cream Sugar and Butter: Cream together the butter and sugar by beating at high speed in a stand mixture until it’s smooth and starting to look white, about 4 minutes.
  4. Add the eggs: Add in eggs, one at a time, beating the mixture well.
  5. Add Vanilla and Buttermilk: Next pour in the vanilla and buttermilk, mix thoroughly.
  6. Food Coloring: Add food coloring until desired color has been reached 
  7. Slowly add flour mixture into the mixture: start by adding 1/2 flour then mix, then add the remaining flour until desired consistency.
  8. Mix in the vinegar and baking soda: Combine the vinegar and baking soda in a small bowl,it will fizz up,Add the mixture immediately to the cake batter.
  9. Mix the batter well: Continue mixing the batter for an additional 3 minutes after adding the baking soda mixture.
  10. Bake the Cake: Pour the batter into the prepared sheet cake pan. Use a large offset spatula or knife to even out the surface. Bake for 20 minutes

  11. Cool the Cake:Remove the pan from the oven and allow the cake to cool in the pan,Cool completely for 15 mins before frosting/icing.
     





How to Prepare:
Creamy vanilla Icing:
  1. Refer the above ingredients for Icing: 
  2. -Combine the flour, salt, and 3/4 cup milk in a saucepan and whisk until smooth.
  3.  -Then whisk in the remaining milk. Cook over medium heat until thickened, whisking occasionally. Remove from the heat, transfer to a bowl, and cool completely.


  4. -Beat the butter and sugar in a large bowl with an electric mixer until smooth and creamy.
  5. MIX THEM ALL:  Add the vanilla, butter sugar mixture into the cooled milk mixture. Beat until well combined,creamy and smooth.Cover and refrigerate for 15 minutes.Use immediately
  6. -Cut the cooled Cake into three equal slices and Spread on cooled Red velvet cake cake
